I’m in love with this recipe. These bites are high in calories for a long day of backpacking. I also prefer eating these bites for breakfast before my long runs. They are easy to digest and give me the energy I need without the full stomach.
No Bake Energy Bites
- 1 cup old-fashioned oats
- 2/3 cup coconut flakes
- 1/2 cup Adam’s Peanut Butter (no hydrogenation, please)
- 1/2 cup ground flaxseed
- 1/2 cup chocolate chips
- 1/3 cup honey or maple syrup (I used a little of both)
- 1 tsp vanilla
Step 1: Mix all ingredients together in a medium size bowl. Once combined, cover and store in the refrigerator for about 30 minutes.
*Storing in the fridge makes the mixture easier to roll into balls. Plus, it helps keep the mixture from sticking to your hands.
Step 2: Roll into balls. See? Easy.
